Coutume Café is one of the pioneers of specialty coffee in France. Australian Tom Clark and Frenchman Antoine Nétien founded a roastery in 2011 that wanted to change how Parisians perceive coffee—from a morning ritual on autopilot to an experience full of flavor and discovery.
Coutume was founded in 2011 when Tom Clark, an Australian accustomed to high-quality coffee culture, decided to change the local approach to coffee after arriving in Paris. Together with Antoine Nétién, they created a brand whose name refers to tradition and ritual—coutume means custom or habit in French. They wanted to start a new tradition: to finally drink great coffee in the land of wine and gastronomy.
Today, Coutume has 15 locations, mainly in Paris and its surroundings, including its own coffee shops and concessions in places such as Galeries Lafayette and La Grande Épicerie. In 2020, the Labruyère investment group joined the company, enabling it to open a new 700m² space in Romainville in 2023, which houses both a roastery and a café. With an annual turnover of around €7 million, Coutume supplies coffee to more than 350 clients, including hotels, restaurants, and companies.
The roastery sources directly from plantations around the world, from Ethiopia to Colombia to Costa Rica. Each coffee machine receives an individual roasting profile to maximize the aromatic potential of the terroir. The brand offers a carefully selected range of single-origin coffees from rigorously selected regions, roasted in the Île-de-France region and prepared to order by baristas. Coutume divides its offering into three categories according to customer experience: accessible coffees for beginners, singular coffees for connoisseurs, and rare lots for experts.
