This batch, roasted specifically for filter preparation, comes from the processing station of the same name, located at an impressive altitude of 2,100 metres above sea level. The founders of the roastery first arrived here on motorcycles after heavy rains and were immediately impressed by the precision of the local producers and the quality of the deep red, incredibly sweet cherries. Thanks to organic certification and gentle wet processing, the Dega and Wolisho grains retain their sparkly character, reflecting the unique terroir of Ethiopia's garden and forest patches. In the cup, the coffee displays the extraordinary juiciness and complex sweetness that is typical of the region.
The main flavour line is made up of bold notes of redcurrant, complemented by a fresh character reminiscent of home-made lemonade. The overall impression is light, elegant and very clean, with a subtle floral aftertaste. It is the ideal coffee for those looking for bright fruitiness, balance and high quality in a filter cup, backed by an organic approach.
