Heirloom Washed comes from Mustefa Abakena Farm in the Oromia region of western Ethiopia. On its 18 hectares, Mustefa grows a variety of varieties from the local research centre. In processing, Mustefa has had to cope with a lack of water and limited space for fermentation.
He therefore processed part of the harvest using the washed method, with a shorter fermentation of eight hours, followed by slow drying on African beds. The result is a coffee with fine texture, balanced acidity and elegant complexity.
