The Los Tres Potros farm, located in the volcanic Apaneca-Ilamatepec mountain range, has consistently been a standout in coffee cultivation, and its harvest regularly places highly in the prestigious Cup of Excellence competition. Under the leadership of Nora Silvia Cabezas de Mendez Florez, the coffee trees grow in the shade of surrounding trees, ensuring slower ripening and a much more complex flavor profile. This particular lot is based on the local Cuscatleco variety, whose beans are distinguished by a creamy texture and a deep, clean character. Natural, or dry, processing—in which the beans are dried for about fourteen days with their husks on raised African beds—gives this espresso tremendous fruity intensity.
In the cup, a rich flavor of blackberries and ripe figs unfolds, perfectly complemented by the slightly bitter, chocolatey notes of crushed cocoa nibs. The result is a dense, velvety-sweet espresso with a long and harmonious aftertaste, demonstrating just how wonderfully nature works its magic on the volcanic soils of El Salvador.
