Coffee backed by a woman with a story. María Belén Díaz from Acevedo, Colombia, isn’t just a grower—she’s an expert who has spent years as a quality analyst and now produces specialty coffee that speaks for itself.
Pink Bourbon from the Resinas farm is one of those varieties that truly shines in the cup. The semi-washed process with anaerobic fermentation—first 24 hours in the cherry, then 36 hours in sealed bags—gives the coffee a distinct fruitiness and structure that comes through clearly in a filter brew. Drying on raised beds for 15 days then completes the clarity of the resulting cup. In a filter cup, the Pink Bourbon variety shows itself in the best light: lively and complex, with pomegranate, green apple, and notes of yellow flowers.
An altitude of 1,800 meters above sea level and the meticulous work of María’s family result in a naturally balanced body and exceptional clarity—this is a coffee that needs no embellishment.
