Sprout Coffee Roasters from Eindhoven offers this coffee as an omni roast—a roast that works equally well as an espresso and as a filter brew. That in itself says a lot: this is a coffee with a clear identity that requires no compromises. Behind its creation is the ACALEM association, which in 2011 brought together 47 growers from the mountainous Morazán region in eastern El Salvador. Fermentation takes place anaerobically for 90 to 120 hours—this is what gives the coffee its distinctive, boozy character.
After fermentation, the cherries are dried on African beds and patios. The beans are hand-sorted, the harvest consists exclusively of fully ripe cherries, and the entire process maintains the moisture content of the dried coffee at 10.5–11.5%. The result? Blood orange, overripe plums, and a creamy, slightly intoxicating base—exactly as the name promises.
