The green beans come from the Lalesa lot and ripen at extreme altitudes exceeding 2,150 meters. The coffee trees grow here in the natural shade of so-called false banana trees (Ensete), thanks to which the coffee cherries ripen much more slowly. This gradual and peaceful growth is directly reflected in the incredible complexity and sweetness that this specialty coffee offers. The processing of this coffee is a carefully crafted alchemy that emphasizes maximum purity and quality.

The cherries first undergo a nine-day anaerobic fermentation in sealed barrels, which gives them a specific texture and that unexpectedly deep rum-like note. The beans are then sun-dried for 13 to 18 days to fully stabilize their flavor profile. Whether you prefer drip coffee or a French press, a wonderfully structured flavor experience awaits you.
