Imaculada – Brazil
Von & Vonnie [ PT ]
Brazilian coffee that defies the notion of what "typical Brazil" tastes like. The Raoní farm in the Cerrado Mineiro region has produced a juicy, surprisingly fruity lot processed using an advanced natural method.
The Barbosa family is one of the longest-standing partners of the Porto-based roastery Von&Vonnie;—and this 2025 vintage is said to have exceeded all expectations. The Yellow Catuai beans were harvested from the middle and upper parts of the trees, where they ripen most evenly, and were transferred to plastic barrels on the very day of harvest for a three-day fermentation. This type of controlled fermentation in natural processing helps develop more complex fruity notes that traditional patio drying alone would not produce. Von&Vonnie roasted this coffee lighter than is customary for their Brazilian lots—and it makes sense.
The lighter roast profile allows tropical fruit and apricot sweetness to shine through, while a pleasant chocolate base remains in the background. The result is a cup that possesses both depth and clarity. The roastery sources the coffee directly from the Barbosa family through their European branch, DBarbosa, and transparently publishes the complete cost structure, including the farmgate price.
