Freddy Humberto Ortega Muñoz started growing coffee on a small plot of land that his father had given him. Over the course of twenty years, he built it into the thriving El Bosquecito farm in the hamlet of Sevilla, in the San Agustín region of Huila—one of Colombia’s most renowned coffee-growing areas. The farm lies at an altitude of over 1,900 meters above sea level, where cool nights slow down ripening and give the beans time to develop complexity. Among other varieties, Freddy grows Pink Bourbon, a variety prized for its natural fruitiness and elegance. Processing follows the classic washed method, but executed with surgical precision—sorting ripe cherries, 36-hour fermentation, and careful drying on raised beds.

The result speaks for itself: the cup is clean, clear, and precise. Lemon freshness gives way to juicy peach, and the whole experience is rounded off by a delicate note of orange blossom. Sprout Coffee Roasters from Eindhoven roasted this coffee as an “omni”—a profile that works equally well as a filter brew and as an espresso.
