Behind this micro-lot is the FCJ Volcán Azul farm and producer Alejo Khale Castro, one of Costa Rica’s most respected coffee growers. The farm is located near the Poás volcano in the Alajuela region, where, at an elevation of around 1,650 meters, fertile volcanic soil meets a stable climate—a terroir tailor-made for coffees with depth and character. The Catuai variety takes on a more modern character here: careful cultivation, selective harvesting, and precision in processing bring out a bolder, richer, and fruitier profile than one is accustomed to with this classic variety. The natural process at Volcán Azul is carried out with remarkable precision.

The cherries are sorted by hand and slowly dried on African beds while being constantly turned, so that the grower has full control over fermentation. The result is a coffee with intense sweetness, a full body, and a layered aroma where dried and fresh fruits intertwine. Moderate acidity adds structure and freshness, while the pronounced and lingering sweetness rounds out the overall impression—perfect for lovers of rich and expressive natural coffees. MABÓ Roastery also releases it with an “omni” profile, so it performs well both in filter brews and in espresso.
