Early Bird Coffee Roasters is a small artisan roastery tucked away in the heart of the Beauvau-Aligre market in Paris’s 12th arrondissement—a place where local shoppers, foodies, and specialty coffee lovers gather every morning. Behind the unassuming facade of the market stall lies coffee that has been honored with the globally recognized Great Taste Award.
The roastery was founded in August 2020 by Joseph and Candyce Loughney—as they describe themselves, two coffee lovers who thrive on a challenge. Joseph, originally from Ireland, honed his craft in Melbourne, from where he brought the Australian approach to specialty coffee to Paris: rigorous selection of raw materials, respect for origin, and direct communication with customers. They opened their atelier in an iconic and vibrant location with great enthusiasm—and the market reciprocated: they became one of its most talked-about stalls.
Early Bird works with specialty coffees, which they roast on-site every day. Their selection consists exclusively of specialty-certified Arabica coffees from Ethiopia, Colombia, Costa Rica, Sumatra, and Tanzania—each with its own distinct profile, ranging from fruity and juicy to complex and chocolatey. Each terroir receives its own roasting profile; Joseph and Candyce support farmers and their sustainable methods. In 2023, their Signature Espresso Roast won the prestigious Great Taste Award with three stars—the highest possible rating. In 2022, they were honored with the Prix du Goût d’Entreprendre for their expertise, creativity, and product quality.

Colombia is one of the most reliable sources of specialty coffee in the world. The local varieties Castillo, Caturra, and Colombia—the blend Early Bird selected for this decaf—grow at altitudes between 1,400 and 2,000 meters, where slower ripening gives the beans time to develop complexity and clean acidity. The washed processing method further enhances this clarity: fermentation and washing under water allow the varietal and terroir characteristics to shine through without any distracting notes from fermentation. Decaffeination using the Swiss Water process is the gold standard in the world of specialty coffee. Without a single chemical—just water, temperature, and time—it removes 99.9% of the caffeine while preserving the green coffee’s flavor profile as close to the original as possible. The result in the cup is smooth, rounded, and surprisingly lively: delicate almond notes, fresh fruit, well-balanced acidity, and a subtle sweetness. The ideal choice for an evening cup or for anyone who wants specialty coffee without the stimulation.
